Blender-Free Strawberry Banana Sorbet
1 medium Banana
4 medium Strawberries
While still in peel, lightly roll banana on counter top to soften it up. Cut one end of banana off and carefully squeeze contents into a plastic sandwich bag. Cut up 4 strawberries, removing leaves, and place in bag. Close bag and squish contents until contents are mixed to your liking. Cut corner off of bag and squeeze into a freezer-safe container (I like to use a rinsed out small Chobani yogurt cup). Cover with saran wrap and a rubber band. Put in freezer and wait for contents to firm. Enjoy.

Vegan Chocolate Mug Cake (can be gluten free!)

Recipe submitted by healthy-skinny-me!

I got this recipe from Chocolate Covered Katie who posts only vegan desserts and I absolutely LOVE IT, even though I’m not vegan. It’s so easy and quick to make, perfect for college! And it can easily be gluten free, too!

Makes: a pretty big single serving dessert.

Nutrition info: 
Calories: 205 with oil (140 without)
Fat: 12g with oil (2g without)
Carbs: 30g
Fiber: 6.5g
Protein: 5.5g 

Ingredients:

  • 1 tablespoon plus 2 tsp cocoa powder
  • 3 tablespoons spelt flour (or white, or even peanut flour)
  • 1/8 tsp salt
  • 2 tsp sugar (or evaporated cane juice)
  • 1/4 tsp baking powder
  • 1 stevia packet (or 1 tablespoon more sugar)
  • 2-3 tsp coconut oil or vegetable oil (Edit: many commenters have said it still tastes good if you sub applesauce or mashed banana. But I can’t personally vouch for the results if you make that substitution.)
  • 3 tablespoons milk of choice (I used almond milk)
  • 1/2 tsp pure vanilla extract

Directions:

  1. Combine dry ingredients and mix very, very well.
  2. Add liquid, stir, then transfer to a little dish, ramekin, or even a coffee mug.
  3. Microwave 30-40 seconds. If you don’t want to eat it straight out of the dish, be sure to spray your dish first (and then wait for it to cool before trying to remove it).

Q:i have a tip. whenever you get the midnight munchies or feel like a light snack, grab some pita and a spoonful of hummus. It's filling, tasty, and less than 200 calories! For the lunch/dinner version, fill the pita with hummus, whatever veggies you want, and enjoy! All that is less than 500 calories, which is around the amount you should consume per meal.
